The classic Rickey cocktail is made from either gin or bourbon with a squeezed lime and topped with a carbonated water. Little or no sugar is added to the cocktail. Originally this cocktail was created with bourbon, by bartender George A. Williamson in the 1880s. A decade later it became a worldwide sensation when bourbon was replaced by gin. This version includes macerated blackberries with sugar. I think it adds a nice splash of deep red color and an earthy flavor to this classic cocktail.

Ingredients
- 2 oz Gin
- 3/4 oz Lime Juice
- 1 tsp of Sugar
- Pinch of mint
- 4 Blackberries
- Seltzer water (or any other sparkling drink)
Instructions
- Put blackberries in the glass, add sugar and gin and let it sit for a couple of minutes.
- Add mint and muddle it with blackberries.
- Add the rest of the ingredients and stir.
